Formula & Method

Starter split is Starter_{flour}=\frac{Starter}{1+h} and Starter_{water}=Starter-Starter_{flour} where h is starter hydration as decimal. Total hydration is Hydration\%=\frac{Water_{total}}{Flour_{total}}\times100.
